Chinese kale (Brassica oleracea var. alboglabra) is a leafy vegetable crop which belongs to the species Brassica oleracea L. and is grown in southern China and Southeast Asia. Bolting stems are the most common edible parts of Chinese kale, Besides good flavor, the stem and leaves are high in anticarcinogenic compounds and antioxidants, including vitamin C, total phenolics, carotenoids, and glucosinolates.
